INGREDIENTS
- 250 grams spinach
- 1 teaspoon baking powder
- Half a cup of milk (I used coconut milk, but you can use any milk)
- 1 cup cottage cheese or feta cheese
- 1 egg
- 1 cup flour (I used self-raising wholemeal flour, but you can use any flour)
- Salt, black pepper
- Oil for frying (Initially, I baked them, but frying makes them more delicious. Avocado oil is the healthiest for frying)
INSTRUCTIONS
- Clean and wash the spinach thoroughly, then drain.
- Finely chop the spinach and mix it with the other ingredients until you get a dough-like consistency.
- Shape the mixture into meatballs by hand, using plenty of flour.
- Prepare all the meatballs and let them rest in the fridge for about half an hour.
- Heat the oil in a pan and dip the rested meatballs into flour before frying them over medium heat, flipping them until golden brown on both sides. (I didn’t use breadcrumbs, and they turned out delicious this way). Serve hot.
- Optionally, you can serve with garlic yogurt and tomato sauce
